New Taipei City has the largest area of green bamboo shoot cultivation in Taiwan. The primary harvest season runs from June to September, making it the best time to enjoy their flavor. Rich in dietary fiber, green bamboo shoots promote digestion and bowel movement. They are a low-calorie, low-cholesterol vegetable, especially suitable for consumption during the hot summer months.
