Tieh-Kuan-Yin
"Shimen Tieh-Kuan-Yin" is made from tender leaves of the hard-stemmed red-heart Tieh-Kuan-Yin cultivar. The tea has a deep, rich aroma, and once brewed, the tea liquor presents a deep brown hue with an oily sheen, showcasing a precise and uniform color. It is known for its intense fragrance and unique, mild fruity acidity.
To enhance market competitiveness, the local farmers' association has, in recent years, guided tea farmers in using charcoal roasting to remove excess moisture and off-flavors from the tea leaves, which also improves shelf life and prevents flavor deterioration.
The introduction of aged charcoal-roasted teas, with over 10 years of aging, has refined Shimen Tieh-Kuan-Yin into a premium product. These teas are noted for their bright reddish-brown liquor, rich aroma, mellow taste, and long-lasting finish, fully expressing the distinguished qualities of aged Shimen Tieh-Kuan-Yin.
