Water Bamboo
The main variety of water bamboo cultivated in New Taipei City is the red-husk type. Nourished by the pristine spring water from Yangmingshan, these water bamboos are characterized by their longer and thicker stems, offering more edible portions. The flesh is exceptionally tender, full, and sweet, making them a top-quality delicacy. Local farmers’ associations have also developed processed products such as crispy water bamboo chips using fresh, seasonal water bamboos, all of which are known for their excellent quality.
