Yam

Yam is one of New Taipei City’s “Three Health Treasures.” The city primarily cultivates three types: the native Keelung variety, red-skinned yam, and white-skinned yam. The main production areas include Ruifang, Shuangxi, Gongliao, Tamsui, Sanzhi, Xizhi, and Pingxi. With a total cultivation area of about 46 hectares, the annual yield is approximately 600 metric tons, generating around NT$160 million in production value. The harvest season is concentrated from September to December.
Among these, Shuangxi, Gongliao, Ruifang, Pingxi, and Sanzhi are the major growing regions for the native Keelung variety, a wild species unique to Taiwan. It is mainly grown using tube cultivation, with the yams reaching lengths of 100 to 130 cm and having a straight and smooth appearance.
The native yam is known for its high viscosity and smooth, silky texture. It does not readily crumble and has a delicate, refined mouthfeel. When cut, the surface does not easily brown, and it has a bright, white, and clean exterior, making it the premium choice among New Taipei’s yams.
